Cowboy Cookies

The classic, crispy, oatmeal chocolate chip cookies as made by Shelby Price.

Ingredients

Directions

  1. Preheat oven to 350° F.
  2. Beat eggs and sugars until light and fluffy, add vanilla.
  3. Add the oil and beat well.
  4. Sift flours, baking soda, baking powder, salt and cream of tartar.
  5. Add flour mixture gradually to egg mixture and blend but do not over mix.
  6. Stir in oats and chocolate chips.
  7. Drop by teaspoonful (melon baller works great) onto parchment paper lined or non-stick cookie sheet.
  8. Bake for about 15 minutes or until golden brown.
  9. Cool on wire rack. As soon as they are cool put them in an airtight container. Ziploc bags are great; this will keep the cookies light and crisp. If the cookies sit out on a tray or plate for very long they will lose their crispness.

Makes about 5 dozen cookies.
